Gluten-Free Maple Pecan Doughnuts

Steps From Batter to Bliss

  1. Preheat the oven to 425° Fahrenheit. Prepare two doughnut pans with non-stick baking spray.
  2. In a large bowl, add the dry ingredients and whisk to combine.
  3. In a small bowl, add the wet ingredients and whisk to combine.
  4. Pour the wet mixture into the dry. Whisk until just combined. The batter will be slightly thick.
  5. Transfer the batter to a large plastic bag or piping bag. Snip about 1/2 inch off the corner of the bag and fill each doughnut cup 3/4 full.
  6. Tap the pan on the counter a few times to remove any air bubbles.
  7. Bake for 7 to 9 minutes, or until the edges of the doughnuts are lightly golden brown in color. Remove the pan from the oven and transfer the doughnuts to a cooling rack immediately.
  8. While the doughnuts begin to cool, it’s time to roast the pecans for the glaze. (If you have already roasted the pecans or bought them pre-roasted, ignore this step.) Pour pecans in a bowl and coat with maple syrup or honey. Spread pecans in an even layer on a prepared baking sheet and bake at 325° Fahrenheit for 12 minutes. You’ll know they are done when they are golden and smell delightful.
  9. To prepare the glaze, add the powdered sugar, maple syrup, milk and vanilla bean paste to a large bowl. Whisk until the glaze is smooth and there are no lumps.
  10. Dip the doughnuts into the glaze to coat the top half of each doughnut. Sprinkle each doughnut with a few generous pinches of chopped roasted pecans.
  11. Allow the doughnuts to cool completely before storing in an airtight container. The doughnuts are best enjoyed the day they’re made, but can stay fresh in an airtight container at room temperature for up to three days.
