Pecan and Cherry Topped Christmas Pudding in White Bowl

DIRECTIONS

1. Combine the cherries, mixed peel and dried fruit into a large mixing bowl and stir in the alcohol and the juice and zest from the orange to create the pudding. Cover the bowl and let it soak overnight while stirring occasionally.

2. After allowing the bowl to soak overnight, coat a 1-liter pudding basin with butter and line it with a circle of parchment paper. Then take 14 by 14-inch foil and parchment paper squares and make a crease in the center before setting aside.

3. To make the topping, put the cherries, brandy, syrup and nuts into a smaller pan and then bring it to a boil. Remove the pan and pour the mixture into the basin to ensure an even coating of pecans and cherries.

4. Stir the remaining ingredients into the fruit mixture before spooning it into the basin without disturbing the layer of topping. Make the surface level before putting the parchment and then the foil on top. Take a piece of string and tie it securely under the basin’s lip and then loop it over itself and tie it for a handle.

5. To bake the pudding, place a saucer under the base of a deep pan. Put the prepared pudding in the bowl and add enough water to reach halfway up the basin’s sides. Place a tight-fitting lid over the top of the pan, and then bring the water to a boil. Once the water reaches a boil, reduce the heat, let it simmer for four hours and add more water if needed. After four hours, remove the pudding from the pan and let it cool completely.

6. The pecan and cranberry pudding is ready to serve once it is completely cool.
