Waffles with Pecans and Powdered Sugar


1. Prepare and preheat your waffle maker per the manufacturer’s directions.

2. Combine flour, baking soda, baking powder, sugar and cinnamon in a large mixing bowl.

3. Mix together egg yolks, buttermilk and vanilla extract in a medium-sized mixing bowl. Make sure all wet ingredients are well-combined.

4. Pour milk and egg yolk mixture into flour mixture. Add in melted butter or margarine, as well as vegetable oil. Stir together your ingredients until batter forms.

5. Using an electric mixer, beat egg whites until they start to form stiff peaks. Usually, this takes several minutes, but if you beat the egg whites by hand, it will take longer.

6. Fold beaten, stiff egg whites into the batter until just incorporated. Do not overmix.

7. If needed, spray waffle iron griddle plates with a non-stick coating. (You can bypass this step if you have a non-stick waffle maker.)

8. Pour the appropriate amount of batter into your waffle maker. Before closing your waffle maker, sprinkle a few pecan pieces into the batter.

9. Close the waffle maker and cook the waffles until fluffy.

10. Serve your pecan waffles hot with all the toppings and syrups you can imagine.
